smoked haddock, cherry tomato, scallions,crème fraiche and melted cheddar cheese

 

SCALLOP CEVICHE,
with watermelon and honey, lime and coriander dressing

 

LAMB CARPACCIO WITH MOZZERELLA,
aubergine and cherry tomato salad, mint and cumin yoghurt

with griiled courgette, roasted plum and chilli oil

 

MAIN COURSE

 

OVEN ROASTSED RACK OF LAMB,
with Fondant Potato, sautéed spinach, red pepper coulis, caramelized onions and thyme and mint jus

 

FILLET OF BEEF,
with Champ Mashed Potato, green bean, battered onion rings and red wine jus

 

STUFFED CORNFED CHICKEN SUPREME,
baby spinach, cauliflower puree, scallion mash and jus

 

POACHED HALIBUT FILLET,
Langoustine, Smoked Gubeen broth, baby potato, wilted Pak Choi, mango and chive butter toast

 

HERB CRUSTED SEA BASS FILLET,
cauliflower and Saffron puree, Samphire, Pickled onion, red pepper and lime coulis and mash potato

with Morrell Mushroom sauce, pine nuts, spinach and sun dried tomato

with carrot, sweet potato mash and spicy oil
